Chocolate lava cake

Best way to make your own chocolate lava cake as a professional, while this seems hard it actually quite easy, with so simple ingredients and it just takes 10 minutes to make and 15 minutes to bake. And the result is a soul satisfied chocolate cake smooth, delicate and delicious with crusty top and runny chocolate inside.

Total time: 25 mins

130g dark Chocolate (1 Cup)
70 g unsalted butter
2 eggs
1 teaspoon vanilla extract
Pinch of Salt 
3 tablespoons sugar
1 tsp expresso coffee (optional)
2 tablespoons flour

To greas the ramekins:
1 teaspoon butter 
2 tablespoons cocoa powder


Preheat oven at 200°C. Prepare ramekins by greas with butter, then dust with powdered cocoa and remove the excess by flipping the molds upside down.
Cut the chocolate into small pieces to melt easily. Melt the chocolate with butter in microwave for 40 secondes. Stir the mixture until you have a smooth chocolate mixture, set a side.
In a large bowl, mix eggs, sugar, salt and vanilla. stir until the sugar dissolves in the egg mixture, then add the flour and coffee, give it a quick mix. Add melted chocolate to the mixture in two phases with continuous stirring until the mixture is completely mixed.
Pour the cake mixture into the prepared ramekins.
Bake the molds in a preheated oven at  200 °C for 15 minutes.
Decorate with powdered sugar.
