Apple Pie Cupcakes

It is apple season and nothing perfect than a delicious cupcake with a cup of tea, i love apple and this fall i just trying to benefit of the tasty recipes with apple. I was confused which recipe to make apple pie cupcake or muffin cupcakes well i decided to make a mix of this and that ;) and yes i'm so satisfied of the result a delicious cupcake filled with caramel apple, so i called it apple pie cupcake.

Apple Pie Cupcakes 

Prep time: 15 mins
Baking time: 25 mins
Total time: 40 mins
Serving: 10


100g butter
2 eggs
3/4 cup sugar
1 tsp vanilla extract
1 3/4 cups all purpos flour
1 tbsp baking powder
1 tsp ground cinnamon
1 tsp baking soda
1/2 cup milk 

for filling:

2 cups apple (2 medium apple)
1/4 cup brown sugar
1 tsp lemon juice
1/2 tsp ground cinnamon

The way:

 Preheat oven at 180°C and prepare the cupcake mold by placing the muffin liner.
Prepare the filling:
Peel the apple and cut into medium dices, cook with sugar on high heat add lemon juice and cinnamon, cook for 5 to 7 minutes until sugar caramelise. Set a side to cool while prepare cupcake batter.
To prepare the cupcake batter:
In a large bowl mix butter with sugar until combine, add eggs one at a time with vanilla extract mix until smooth.
Sift the dry ingredients, then add it to the mixture into two phases with the milk.
Mix all together until you have a smooth cake mixture.
Fill the muffin liner 1 tbsp cupcake mixture and fill with 1 tbsp of apple then cover with another tablespoon of cupcake mixture, until filled three quarter of each muffin liner.
Bake at 180°C for 25 minutes. When out of oven let it cool on wire rack.
Decorate with Caramel sauce and walnut.
