Lentils and Rice (Mujaddara)



One of the easiest recipe for everyday life is Lentils with rice, so easy and full of health benefits. I love this vegan dish especially with salad but my kids enjoy it more with yogurt.
I love a mediterranean food, i think this recipe origin Lebanese or greek, i searched in google and found many similar recipes, anyway who invented this dish deserve a prize. For how easiest, full of protin, vitamins and delicious dish prize. LOL

Lentils and Rice (Mujaddara)

Prep time: 10 mins
Cooking time: 40 mins
Serving: 3 persons

Ingredients:

1/4 Cup brown lentils
2 cups jasmine rice
1/4 tsp ground cinnamon or a stick
1/2 tsp ground cumin
pinch of black pepper
4 cups hot water
salt, to taste

4 medium onion
2 tbsp vegetable oil

The way:

In a large saucepan boil 2 cups of water, add the lentil. Season with olive oil, cinnamon and cumin. Cook on a medium heat for 20 -25 minutes until the lentil cooked.
Soak rice in water for 10 minutes.
 While the lentil cooked, cut the onion into slices.
In a large pan place 2 tbsp vegetable oil, add the onions slices and stir on a high heat until caramelized.
Add rice to lentils, mix to corporate, add 2 cups of water. Let it boil for 2 minutes then Reduce heat to low, cook for 20 minutes or until well cooked.
Serve rice in dishs and top it with caramelized onion.
Serve it with salad or yogurt.
